Ingredients
- 3 sweet potatoes, long and skinny
- 6 ounces brie log
- ¼ cup cranberries, dried (can use cranberry sauce)
- 2 teaspoons honey
- ½ teaspoon cinnamon
- 1 teaspoon thyme, fresh
- 1/3 cup walnuts, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 425º degrees.
- Line two baking sheets with parchment paper.
- Wash sweet potatoes then slice to ½” to ¾”-thick rounds – about 16.
- Place rounds on baking sheet.
- Drizzle tops with olive oil, season with salt and pepper.
- Bake for 20-25 minutes – fork done, not mushy.
